Menu Plan Monday & A few more kitchen projects

Have a good weekend?  Our son Miles came home for the weekend and we just tried to relax and enjoy his company. Of course, we may have squeezed in a project or two.

Here’s a look at this week’s menu chalkboard.

Monday: Grilled Shrimp and Sundried Tomato Risotto

These are the same shrimp I was supposed to cook last week, but I messed up again and pulled out chicken. So we had our pasta that was scheduled last Monday with chicken instead of shrimp.  It was good but we all agreed it was a happy accident.  The pasta really worthy of such good shrimp.

Tuesday: Beef Stroganoff in the Slow Cooker

I’m not a huge fan of slow cooker recipes, but I’m willing to give this one a try.

Wednesday: Leftovers

Thursday: Spaghetti and Meatballs

I”m going to give these meatballs a whirl. I still don’t feel like I’ve perfected the gluten free meatball.

My Authentic Italian Style Meatsauce is very loved around these parts and will be using this recipe for the sauce. Be sure not to leave out the short ribs!!

Friday: Spinach Frittata

I haven’t completely decided on a recipe, but I know I would like it to be cheesy and maybe include some Italian Sausage.

Saturday: Oven Tacos

Sunday: Leftovers

Around the house this week:
I’m squeezing in two more projects before the reveal of the kitchen.  One project is just handiest of Ikea hacks using some dead cabinet space.

The second project kind of snuck up on me last week. Or I guess I should say it kind of smacked me in the face. I realized that with all the work on the kitchen, I failed to consider our eat in kitchen area.

My dream is to build a banquet in the corner, but we are all a little construction weary and decided, that for now, we would set that plan aside. This particular photo is from several months ago, right after the counters were installed.

I had never intended to leave these chairs with black leather seats. I certainly don’t want black leather in my new kitchen! So last week, I selected and ordered new fabric for the chairs.  I’m just as antsy as can be to get the fabric in and hopefully get them recovered this week.
