I’m actually not going to share a complete menu this week. What can I say? It’s summertime and we’re going to take it easy this week.
Not to fear, however, I won’t leave you empty handed or empty plated. I’ve got some really great recipes from my collection to share.
Tonight, we are having Shepherd’s Pie. A true comfort food in my opinion.
I could use a little comfort food after our week long mission trip to Oklahoma. I’ll share more about the mission trip tomorrow. Two of my friends from church prepared meals for us in the evenings, but several of them weren’t gluten free. Not to worry I didn’t starve. I can usually pull together some things to eat, but I’m looking forward to a good complete home cooked meal.;)
The other recipe I’m sharing is my favorite version of a Healthy Corn Chowder. I have other recipes that are equally delicious, but much heavier in taste and calories. This lighter version seems perfect for a summer soup, not that I don’t enjoy this in the winter as well. 🙂
It is also amazing with the fresh corn that fills our farmer’s market or local groceries this time of year. It’s a must have recipe.
