Menu Plan Monday Aug 5-10

Welcome to Menu Plan Monday, I’m now pretty excited to share this week’s menu with you.

Emily looked at the chalkboard this morning and declared, “This is going to be a good week!”  I thought that was a pretty good endorsement, until dinner time, when I shared what she said. Miles came back with “Every week is a good week.”  I love that boy! Way to make a momma feel appreciated. 🙂

Monday: Leslie’s BBQ Chicken Rub & Grilled potatoes & Salad

 This rub is a no fail recipe.  Any type of chicken turns out juicy and delicious. They never seem to tire of this one.

Tuesday: Creamy Shrimp and Grits with Andouille & Roasted Green Beans

This dish is inspired by my trip to Charleston a few years ago and is a special treat for dinner. But it’s so easy it doesn’t have to be a special occasion. Spoil your family with this one soon!

 

Wednesday: BBQ Chicken Pizza & Fruit Salad
 I will be using the leftover BBQ Chicken, making a gluten-free pizza crust topped with BBQ sauce, bacon and Colby jack cheese. It’s a real winner.  I’ll write up this recipe later in the week.




Thursday: Beef Nachos & More fruit salad

Richard requested Nachos with my Black Bean Refried beans. Pretty simple dinner, so I was happy to oblige. 

Friday: Leftovers

Saturday: Steak Fajitas & Mexican Street Corn

I usually make my fajitas with a flat ion steak, but last week the charcoal steaks were on sale.  I’ve used this cut before and they turn out fairly well, especially if you marinate them overnight.

 This recipe for Grilled Mexican Street Corn is really great.  It was a big hit the last time I made it.
