Has school started in your neighborhood? My daughter, who will be a freshman this year had an orientation day today and we are off and running?
Full day tomorrow for her and our big senior son! Where does the time go? Just yesterday he was starting kindergarten. I promise!
Anyway, here’s a look at this week’s menu.
Monday: Classic Lasagna and Roasted Green Beans
Ok, so I didn’t get to make this last week and made it tonight. It was really quite wonderful. The family declared it a hit, but I want to work on proportions a little more before I share. They said they would be happy to keep sampling. 😉
Part of the problem with tonight’s version was I needed 2 boxes of gluten free noodles to make a full 9×13 pan of lasagna. Why weren’t there enough in one box to make one pan of lasagna I’ll never know. Needless to say my lasagna was a little short, petite if you will. But they can’t wait to have it as leftovers!!
Tuesday: Chicken Cacciatore and Creamy Polenta
I had something else planned for Tuesday, but it turns out the meat sauce I took out of the freezer for the lasagna was actually Chicken Cacciatore. Um, yeah, I should have labeled the container. So we need to eat this. It’s a great recipe and obviously the sauce freezes well. 😉
Wednesday: Church Youth Group
I’m thinking pretty much all school year this will be an open spot on our menu. My husband and I are volunteering as High School sponsors at our church. Since it’s kind of an open door all night at the church, dinner will be provided. I’m sure I’ll share a recipe to feed a crowd when it’s our turn to bring a meal.
Thursday: Leftovers
Friday: Meatball Stroganoff
Meatballs in a Stroganoff is very family friendly. Most kids prefer meatballs over a meatsauce or cuts of beef. At least mine did when they were little and still do actually.
I have a recipe I’ve been using for years, but I’m still working on a really great gluten free meatball. I’ll get back to you soon. 🙂
Saturday: Italian Trio Pasta and Fruit Salad
The”trio” comes from the three meats, chicken, bacon and Italian sausage, that go into this family favorite quick pasta toss.
Sunday: Leftovers

White Chicken Enchiladas Casserole
All the goodness of white enchiladas without all the fuss of rolling and stuffing. It’s got a nice mild twist that I think you will love.
