Monday: Alice Springs Chicken and potato casserole
I pretty much followed this recipe for the sauce, but I think grilling the chicken is critical to making it taste more like the original recipe. Maybe I need to share mine next time. 😉
Tuesday: Leftovers, we have a good bit of Gumbo leftover too!!
Wednesday: Church Youth Group
Friday: Jambalaya Risotto
While not at all an authentic Cajun recipe, it sure looks delicious!
Sunday: Chicken Cacciatore and Creamy Polenta
And lastly, here’s an update on last week’s menu.
The Potato and Bacon Breakfast Casserole was really good. I think it needs more egg though.
I also typed up the recipe for my Gluten Free Cajun Chicken and Sausage Gumbo. Even if you don’t need to be gluten free, this is an excellent, authentic Cajun recipe. Just use regular flour and you will be swimming in gumbo goodness!
