Anyway, here’s a look at this week’s menu.
Monday: Polenta Pizza
I made this last night and while it was really tasty, the crust was mushy. I worked off of two different recipes and neither one of them had you prebake the crust. I think that’s going to be necessary. I’ll share when I get it perfected.
Tuesday: Curry Chicken and Vegetables
Going to combine a couple recipes I found. I want a strong sauce and a good dose of veggies. I’ll report back next week if I get the combination right. 🙂
Wednesday: Cooking for the Youth Group at Church. This week it will be a simple chicken fettuccine. I’ll be cheating and using a jar sauce since I need to serve around 40 teenagers. I’m sure they will love it either way!
Thursday: Leftovers
Friday: Mozzarella and Salami Chicken Roll-Ups

Saturday: Sundried Tomato Risotto
I’ll try and cook this early enough in the day to get a more pleasing photo. It’s super easy to make and very delicious, though. Don’t let the sad photo deter you away from trying this one.
Sunday: Super Bowl Sunday!
