It’s a beautiful Monday here in Mid Missouri. Spent the morning in my favorite way, running on the trail with the dog. Happy, Happy, Happy!
Here’s what the menu looks like this week.
Monday: Three Cheese Pizza
Pretty simple dinner. I used leftover white ricotta cheese sauce, Monterrey jack cheese and mozzarella cheese, topped with Italian turkey sausage and fresh basil. For the crust, I used flat breads for the gluten eaters.
Tuesday: Grilled Lime Marinated Chicken and Refried Black Beans
Wednesday: Church/Leftovers
Thursday: Lime Marinated Chicken Quesadillas
Friday: Shepherd’s Pie
Saturday: Out for Dinner!
Sunday: Leftovers
Here’s a new recipe for a Rustic Tomato Florentine Soup. It’s inspired by my favorite soup at a local restaurant in town. I’ve been working on this recipe for several months and I’m happy to share it with you today!
